As with the other books written by this author, this text provides an accurate and comprehensive look at wheat. From the early cultivation of wheat over 17,000 years ago to modern culture today, the text and photos tell the story of wheat. The author has even depicted and described the milling process. The author does a good job of explaining the six classes of wheat and the difference between winter and spring wheat. The one minor flaw appears in the caption of a photo, which identifies large round bales of wheat straw as bales of hard red winter wheat. The book ends with a good glossary.
